Here at Whitley Academy we encourage students to explore a wide variety of skills through practical based tasks. In KS3 student are taught through a carousel where they gain valuable and life long experience in cooking skills, food preparation and hygiene.
Students undertake the Licence to cook programme and conduct a 6 week project upon Healthy Eating. Hygiene procedures are implemented effectively teaching students the effects this has on everyday life. Students will learn to cook a variety of dishes with emphasis on holding and chopping techniques.
Students conduct a project on Foods from around the World. They are introduced to a variety of herbs and spices from different cultures. Students learn to create main meals from scratch including sauces and bread making. Multicultural cuisine is a rapidly growing market therefore, at Whitley we try to encourage the exposure to all these cuisines, examples are: Indian cuisine, Thai cuisine, American cuisine, Chinese cuisine and many more.
Buffet foods are the focus here where students learn a variety of practical skills. Investigating what finger foods are and how to create accuracy in portion sizing. Students learn to make short-crust, choux and puff pastry from scratch. They learn a selection of chopping techniques which they carry forward into each practical and are given the opportunity to explore different tastes and smells.
Hospitality & Catering
In KS4 students are offered the optional course of Hospitality & Catering as a GCSE course which runs over two years. We use the WJEC exam board, students will conduct two task units and a written paper at the end of Year 11.

Duration – 15 hours including planning, making and evaluating

Duration - 30 hours including investigation and planning, carrying out the task, evaluation

Pupils are well-prepared to take the examinations at the end of the course. Throughout year 10 and 11 they conduct a series of practical assessments in preparation for Task 1 & 2. This controlled assessment help in building confidence for time management as this is essential in the practical exam. Students gain the ability to multitask with organisational skills and planning.
